Tom joined forces with Jose & Stephen Baker at Carbis Bay Hotel & Estate to create an exciting pop up dining experience that simultaneously supported the removal of 50 metric tonnes of plastic from our oceans in partnership with Parley.

Carbis Bay is a luxurious coastal retreat with its own privately owned 25-acre Blue Flag beach which provided a stunning backdrop to the dining room. Counter tops made from chopping boards and plastic packaging, seat cushions with recycled plastic content, reclaimed barn oak and a statement terrazzo sharing table all demonstrate the virtues of creative re-use in support of the clean ocean initiative.

Patinated copper sheets reference Cornwall’s mining history and features on service units and the bespoke champagne trolley. All units are on heavy duty castors to give the team plenty of layout options for special events such as weddings.

A steel ‘net’ frames the prep kitchen with added texture from low level wired safety glass. 2 site specific planting installations include reclaimed driftwood and provide a complimentary feature to that incredible view.
