A 3 STAR ENDEAVOUR

 

We’ were thrilled to be involved in Angelo Sato’s unrelenting quest for a three star dining experience. Immediately after earning two stars, he wanted to completely refurbish the restaurant to create an intimate chef’s table.

In typical London fashion, the floor plan was small. Making utilising every square inch imperative for such a complex level of service.

Nelson’s Commercial Kitchens worked closely with Angelo on a bespoke cook suite. Our finishes needed to be durable but beautiful, with Claybrook’s glazed porcelain tiles providing an attractive patina, alongside fire resistance for the robata. Warm timber counters and cladding providing a counterpoint to the deep blue hues. An alabaster wall light adding more subtle texture.

Bespoke copper mesh panels from Glass Designs Ltd overclad the extract canopy and add further fire with dramatic spotlighting.

The counter is clad in engineered marble, with bespoke Italian bar stools upholstered in high quality leather.

Bespoke joinery lines the opposite side of the dining room, providing attractive storage to facilitate Michelin level service. Incorporating a meet and greet, coat storage, dry store, Sake collection and service unit. All elements have been carefully considered and soft close mechanisms and integral lighting elevate the end result.

The small bar is in antique brass, with a bespoke pattern laser cut in to the drip tray. The back bar is in dark oak which contrasts with the opal feature pendant above it.

We have no doubt that Angelo and the team will achieve their 3 Star goal and we’re proud to have been part of their journey.
